The...I love the ease of making yogurt in my IPOT. <br /><br />The first step: pour in milk, close, push YOGURT, push ADJUST, "Boil" appears, close and walk away, in a few minutes it beeps, open to let milk cool off, stir in starter,(I use a cup from my last batch,) close and reset to yogurt; default is 8hrs but you can adjust up or down.<br /><br />Boiling milk on the stove top was the part I hated about making yogurt before. Most tender steak I've ever cooked; and it was a low quality meat! Then the rice. I have some rice that bubbles up in the rice cooker and makes a mess. In the Instant Pot, it cooked the rice better than any rice I've cooked before, rice cookers included. And it kept all the fragrance in. Who knew that rice has a distinct fragrance of its own? It smells good. Tonight I cooked a whole chicken. It is about the value of cooking pressure, and stems from the fact that in the old days old-gen pressure cookers were standarized at 1 bar / 15 psi pressures (over atmospheric). Most recipes have been adjusted to this. <br /><br />Right now most top-end stovetop pressure cookers still utilize this 15 psi / 1 bar (over atmospheric) pressure. But electronic pressure cookers have typically lower working pressures, like 9 -12 psi over atmospheric, rather than 15. This is because they are a derivative of the evolution of rice cookers toward becoming multicookers, rather than bein an electronic version of a stovetop pressure cooker.
